When speaking of Indian cuisine, you will think of “curry”. Curry is to describe a general variety of spiced dishes. The traditional Indian curries include spices like clove, fennel seed, turmeric powder and pepper, exuding a rich and spicy flavor.

Located on NAPE, opposite to Kun Iam Ecumenical Centre, Taste of India is a traditional Indian restaurant. The store-owner Bela Fernandes early traveled to India and was addicted to Indian cuisine,then brought this flavor back to Macau. In order to preserve the original flavor, she also employed Indian chefs to carefully cook traditional spiced dishes and chose the ingredients mostly shipped from India. Indian cuisine here will also be carried out some improvements with a heavy and spicy flavor, in order to suit for Chinese diners’ palate.

Bela said, Indian cuisine is virtually divided into South-Indian cuisine and North-Indian cuisine. With a hot and humid weather, rice is the staple food of South-India region where people love heavy and spicy curry dishes. Instead North-Indian region has noodles for staple food, for example the cake made of wheat flour. Their cuisine emphasize aroma, mixed with dairy products delivering a mild spicy.
        
There are "vegetarian" and "non-vegetarian" in Indian cuisine, but whether you are vegetarian or not, you generally don’t eat pork and beef. In fact, Indians believe pig is dirty animal that they dislike eating, while the cow is sacred that they dare not to eat. In India, the sheep has naturally become the main meat, which has a heavy and fishy smell. But the flavor of vegetables, fish and chicken is slight, and therefore Indians adding a wide variety of spices while cooking to make the taste richer. That’s Indian cuisine today.

When eating Indian cuisine, you generally have pre-dinner drinks, crackers, salad or soup in turn, then the appetizer which must be cooked on a griddle, followed by the main course which must be a curry dishes. In addition, if the color of the appetizer is too heavy, it means that’s not good.  The more nature the food color has, the better the curry tastes and the fresher the food is.
